One of the problems you'll often face while making a chicken pizza is the pulpy chicken mince that spoils the texture of the entire pizza. To make a better chicken pizza, you must remove 90% moisture from the chicken pieces to get a better and crunchy topping. Instead of using normal processed cheese, I've added some flavors to the cheese to give this pizza a unique taste. You can experiment and can change the seasoning as per your taste. If you do not eat shallots, you can completely omit them. You must consume it on the same day as the chicken pieces may get pulpy if kept for the long time. I've given a rectangular shape to this pizza which makes the cutting process extremely easy and convenient.

Cheesy chicken pizza

Nothing tastes better than chicken pizza recipe which includes hot shallots and loads of seasoned cheesy base to give you a perfect and delicious topping.

Preparation Time: 20 minutes
Cooking time: 30 minutes
Servings: 6

Ingredients:
  • 3 cups whole wheat flour
  • 2 tsp unsalted butter
  • 1 egg
  • pinch of baking soda
  • pinch of salt
  • 400 gm chicken breast
  • 250 gm shallots
  • 300 gm cheddar cheese
  • 200 gm tomato sauce
  • 1 tsp chilli sauce
  • 1 tsp dried oregano
  • 1/2 tsp white pepper powder
  • 1/2 tsp dried rosemary
  • coriander leaves for garnishing
  • 6 tsp olive oil
  • salt to taste

Instructions:

  1. Add egg, unsalted butter, pinch of baking soda and salt to the whole wheat flour.
  2. Make tight dough with lukewarm water.
  3. Cover with moist muslin cloth and keep aside for at least 2 to 3 hours.
  4. Finely chop 1/3rd of shallots and puree the rest in a blender.
  5. Make sure you remove the extra water from the pureed shallots.
  6. Cut chicken breast into small pieces.
  7. Heat 2 tsp olive oil in a shallow frying pan.
  8. Add shallots puree and saute for about 2 minutes.
  9. Add chicken pieces, white pepper powder and salt.
  10. Saute for about 2 to 3 minutes and bring down from the flame.
  11. Grind cheddar cheese and add oregano, rosemary in it.
  12. Mix chilli sauce with tomato sauce and keep aside.
  13. Take a large baking tray and grease it well with the remaining olive oil.
  14. Make a pizza base and place it on the greased tray.
  15. Put a layer of spiced up tomato sauce.
  16. Arrange of layer of lightly fried chicken pieces.
  17. Make a layer of seasoned cheese on top.
  18. Grill it in a preheated oven for about 15 minutes at 180 degrees.
  19. Garnish with chopped shallots and coriander.
  20. Serve hot with chips and fruit juice.
