Baked Apples with Pecan Nuts and Mushroom Stuffing

Normally apples are not used as a base for stuffing. But they can be extremely delicious if topped with a crunchy and nutritious filing. That's what I've done in this recipe. I've taken yellow apples (green apples can also be used) for this preparation. One of the important ingredients of this stuffing is pecan nut. If it is not available in your area, you can easily replace them with walnuts. While purchasing apples for this recipe make sure you select hard and raw apples. This helps them keep in shape while baking with the stuffing. You can serve these stuffed apples as a starter or you can use them in breakfast. You must consume these stuffed apples on the same day as it cannot be kept for very long time.

Flavorful stuffed apples

Make this unique stuffed apples recipe with a delicious filling which includes tasty pecan nuts and loads of seasoned sliced mushroom for a unique flavor.

Ingredients:
  • 10 to 12 yellow or green apples (nice and big)
  • 200 gm pecan nuts
  • 200 gm mushrooms (chopped)
  • 1/2 tsp chili flakes
  • 1/2 tsp dried and powdered mint leaves
  • 1/4 tsp white pepper powder
  • 1/4 tsp vinegar
  • 1/4 tsp dried oregano
  • 1 tsp onion paste
  • 1/2 tsp brown sugar
  • 4 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Wash apples and cut them in two halves.
  2. Scoop out all the extra flesh from between to make apple bowls.
  3. Heat oil in a shallow frying pan.
  4. Add onion paste and saute for about 2 minutes.
  5. Add chopped mushrooms and stir fry for two more minutes.
  6. Add chili flakes, white pepper powder, dried oregano and mint leaves powder.
  7. Continuously stir on a high flame for about a minute.
  8. Add brown sugar, pecan nuts, vinegar and salt.
  9. Stir fry for about 3 minutes and bring down from the flame.
  10. Apply olive oil inside apple bowls with a brush.
  11. Stuff them with the pecan nuts and mushroom filling.
  12. Bake in a preheated oven for about 5 to 6 minutes at 200 degrees.
  13. Serve hot with your favorite juice.
