Here's a unique combination of spaghetti and sardine that's going to make your breakfast, a fulfilling experience. Although fresh sardines are not readily available in most parts of the world, using a canned version for this recipe works just as well. If you can get the fresh ones, nothing can be better than that. This is a fairly dry recipe which is contrary to a typical spaghetti preparation. If you want, you can add some more sauces to it to get a creamy texture. I've used carrots and iceberg lettuce in this recipe. To make it richer and visually appealing, you can also add bell peppers and whole green chillies. We all know sardines can't be kept for long, so consume this preparation fresh and hot.

Do try this yummy spaghetti preparation consisting of stir fried sardines and loads of fresh carrots which are spiced up with flavorful sauces and spices.

Preparation Time: 15 minutes
Cooking time: 20 minutes
Servings: 4

Ingredients:
  • 250 gm spaghetti
  • 200 gm fresh sardines
  • 100 gm carrots (shredded)
  • small bunch of iceberg lettuce (chopped)
  • 1/4 tsp white pepper powder
  • 1 tsp tomato sauce
  • pinch of chilli flakes
  • 1/4 cup of Parmesan cheese
  • 2 garlic cloves (finely minced)
  • 3 to 4 basil leaves (finely chopped)
  • 2 tsp fresh lime juice
  • 6 tsp olive oil
  • salt to taste

Instructions:

  1. Apply salt, lemon juice and olive oil on sardine pieces.
  2. Grill them in a preheated oven for 5 minutes at 180 degrees.
  3. Parboil spaghetti and apply olive oil on them. Keep aside.
  4. Add 3 tsp olive in a wok and add minced garlic to it.
  5. Saute for about a minute and add tomato sauce, chilli flakes and basil leaves.
  6. Stir fry for 2 more minutes and add carrots.
  7. Add Spaghetti, sardines, iceberg lettuce and a pinch of salt.
  8. Stir well on high flame and add Parmesan cheese.
  9. Add white pepper powder and bring down from the flame.
  10. Serve hot with a citrus fruit juice.
