Roasted Coconut Shrimp with Spicy Pineapple Salsa

On with 0 Comment
Anything roasted is consumed wholeheartedly by my family. And if the recipe contains seafood, it's like icing on the cake. Shrimps are the most consumed seafood at my home. This time I've combined them with a Mexican salsa to give it a tangy and spicy flavor. If you've never used coconuts with shrimp, I bet you'll use them again and again once you find how good this combination is. If you can get a charcoal grill for this recipe, nothing can be better than it. You can use the same method for squids too. This preparation should be consumed hot for experiencing the best taste and aroma. Although, I prefer this recipe with fried or boiled rice, you can also take it as a starter before the main course.
