Crunchy Sandwich with Leek Fried Egg and Mushrooms

If your kids don't like egg, just stuff it into a tasty sandwich. That's what I've done in today's recipe. I've made the buns bit crunchy by layering them with semolina and then by quickly shallow frying them. This sandwich is not only tasty but is also full of nutrients with the goodness of mushrooms and leek. Instead of simple fried egg, you can also use seasoned boiled egg crumbles. It's a perfect recipe for Sunday breakfast that you can take with a glass of orange juice. Almost every sandwich goes very well with different kinds of sauces. The one that you use on a daily basis can be added to this recipe. While making this sandwich, do not saute the veggies too much else the crunchiness will vanish and you may not get the original taste.

Crunchy leek and mushroom sandwich

This delicious sandwich has a crisp outer shell and is loaded with fried egg, fresh mushroom slices and seasoned leek giving you a nutritious helping.

Preparation Time: 10 minutes
Cooking time: 15 minutes
Servings: 4

Ingredients:
  • 4 normal burger buns
  • 2 tsp semolina
  • 4 eggs
  • 250 gm leek (finely chopped)
  • 150 gm button mushrooms (finely chopped)
  • 100 gm red bell peppers (cut in small pieces)
  • 6 tsp mayo sauce
  • 1/2 tsp chilli paste
  • 1/4 tsp black pepper powder (coarsely ground)
  • 1 tsp butter
  • salt to taste
  • oil for shallow frying

Instructions:

  1. Cut all 4 pairs of buns in two pieces each.
  2. Lightly glaze the outer part of every bun with butter.
  3. Heat oil in a shallow frying pan.
  4. Sprinkle semolina on the glazed part of buns.
  5. Fry each bun's outer part for about half a minute and keep aside.
  6. Grease a non stick pan with oil and add mushrooms, bell peppers and leek to it.
  7. Saute for about two minutes.
  8. Add chilli paste, black pepper powder and salt.
  9. Stir continuously and saute for about 2 minutes more.
  10. Now for each sandwich, fry an egg in a pan and sprinkle black pepper powder and salt on top of it.
  11. Put a layer of mayo sauce on both the buns in every pair.
  12. Place fried mushrooms and veggies on top of it.
  13. Place fried egg above it and cover it with the mayo layered second bun on top.
  14. Serve hot with your favorite juice.
