Tender meat of lamb tastes great when cooked with spicy sauces or gravy. Today's preparation includes boneless lamb meat with a coat of butter and pineapple sauce. It's a perfect preparation for your brunch as well as for the parties. This delicacy goes well with a good quality red wine. Butter is an important part of this recipe, so you must take every care not to replace it with any kind of cooking oil. Since this recipe involves deep frying in butter, you can keep it refrigerated for at least 2 days. If you want to avoid deep frying, you can grill it with butter coating. Although I've not pierced the meat in this recipe, you can do so in the second phase to let sauce go deep into the tender juicy meat.

Fruity lamb pieces with pineapple sauce

Try this tender lamb pieces shallow fried and drenched in tangy and flavorsome pineapple sauce giving it a unique and irresistible flavor that’s mouth watering.

Preparation Time: 15 minutes
Cooking time: 30 minutes
Servings: 4

Ingredients:
  • 750 gm boneless lamb piece (flat)
  • 2 onions (medium sized)
  • 2 tomatoes (medium sized)
  • 1 tsp dried thyme
  • 1/2 tsp brown sugar
  • 1/2 cup refined flour
  • 1 cup pineapple juice
  • 1/4 tsp white pepper powder
  • 4 tsp unsalted butter
  • normal butter for shallow frying
  • salt to taste

Instructions:

  1. Heat butter in a deep frying pan.
  2. Lower the flame and deep fry lamb pieces for about 3 to 4 minutes.
  3. Chop tomatoes and onions in small pieces.
  4. Heat 1 tsp unsalted butter in a shallow frying pan.
  5. Add tomatoes and onions and saute for about 5 minutes.
  6. Add a pinch of salt and white pepper powder and bring down from flame.
  7. Coat the fried chicken with fried onions and tomatoes.
  8. Heat remaining unsalted butter in a separate pan and add refined flour to it.
  9. Saute for about 5 minutes.
  10. Add brown sugar, dried thyme and pineapple juice.
  11. Close the lid and simmer it for about 8 to 10 minutes.
  12. Cook till sauce reaches thick consistency.
  13. Pour sauce in the large serving plate.
  14. Place the buttery fried chicken on top and serve hot.
