You can use this salad as a spread for your toast or sandwich. Just because I'm obsessed with chicken, I try to include it in every recipe in different forms. This fruity salad has tender chicken breast and the spiciness of red peppers. Don't panic, I've removed the fire from these peppers through a simple trick. If you're not comfortable with using normal red peppers, you can easily replace them with red bell peppers. Same thing applies for red grapes used in this salad. If they're not available in your area, you can substitute them with black grapes. I've also used a unique combination of mint and basil in this salad. It gives a new twist to this recipe giving a completely different flavor.

Spicy chicken salad with toasts

Do once try this fruity and spicy chicken salad recipe whose flavor will remain on your taste buds long after relishing it with crisp and delicious toasts.

Preparation Time: 20 minutes
Cooking time: 25 minutes
Servings: 6

Ingredients:
  • 400 gm chicken breast
  • 150 gm red grapes
  • 4 fluffy red peppers
  • a small bunch of mint leaves
  • 1/5 cup crushed basil
  • 200 gm whipped curd
  • 1/4 tsp black pepper (coarsely ground)
  • 1/4 tsp dried oregano (crushed)
  • 1/2 tsp lime juice
  • 2 tsp extra virgin olive oil
  • salt to taste

Instructions:

  1. Soak red peppers in water overnight.
  2. Slit them and take out all the seeds from inside.
  3. Chop them into small pieces. This methodology will remove all the heat from the red peppers.
  4. Cut chicken breast into small pieces.
  5. Apply lime juice and salt on them and keep aside 10 minutes.
  6. Cut red grapes into small pieces and keep aside.
  7. Blend mint leaves with some water to make a fine paste.
  8. Heat 1 tsp olive oil in a nonstick frying pan and saute chicken breast pieces for about 2 minutes.
  9. Add mint paste, grapes, basil, red peppers, black pepper, oregano and a pinch of salt in the whipped curd.
  10. Add 1 tsp olive oil in the curd and mix it well.
  11. Take toast pieces and arrange fried chicken breast pieces on it.
  12. Put a layer of seasoned green curd on top of it.
  13. Serve with chips or with your favorite fruit juice.
