Spinach is one of the best sources of iron but unfortunately lots of kids don't like to consume it. A simple remedy to this problem is to add it to the recipes they love. This time it's a pizza packed with the goodness of spinach and mushrooms. I've also included tomatoes in generous amount to give it a tangy flavor. I've used mozzarella cheese for this preparation but you can definitely replace it with your favorite cheese you regularly use for pizza. There are two methods to add spinach in this pizza. Either you make a concentrated puree or you add whole leaves cut in small pieces. I've used the latter technique to make it look more colorful. As always, I'll suggest you to make the pizza base at home instead of buying a ready made version from the supermarket.

Rich and delicious spinach and mushroom pizza

Do try this easy-to-make and delicious pizza recipe made with loads of yummy tomatoes, mushrooms and fresh spinach leaves to give you a nutritious delight.

Preparation Time: 30 minutes
Cooking time: 20 minutes
Servings: 6

Ingredients:
  • 4 cups wheat flour
  • 1 egg
  • pinch of baking soda
  • 3 tbsp extra virgin olive oil
  • 300 gm spinach (washed and chopped)
  • 200 gm button mushrooms
  • 2 big tomatoes (ripe)
  • 300 gm mozzarella cheese
  • 1/2 tsp black pepper
  • 1 tsp mixed dried herbs (thyme, oregano, rosemary)
  • salt to taste

Instructions:

  1. Add baking soda, egg, 2 tbsp olive oil and salt to the flour.
  2. Make dough and cover it with wet muslin cloth. Keep aside for 15 minutes.
  3. Heat 1 tbsp olive oil in a pan and add mushrooms and spinach to it.
  4. Saute for half a minute and remove from the flame.
  5. Add black pepper and pinch of salt to the lightly fried vegetables.
  6. Create a large pizza base and make a layer of melted mozzarella cheese.
  7. Cut tomatoes in thin round slices.
  8. Arrange tomatoes, mushrooms and spinach leaves on the cheese layer.
  9. Sprinkle dried herbs on top of it.
  10. Grease the baking tray with olive oil and arrange pizza on it with a large spatula.
  11. Preheat the oven at 180 degrees and bake the pizza for about 10-12 minutes.
  12. Cut it into equal pieces and serve hot.
