My family consumes eggplants in several forms as it is a rich source of iron and several other important minerals. Generally, we bake it with other vegetables or combine it with other recipes as a filler ingredient. But today, I'm going to share a tasty appetizer made from eggplants. It's extremely easy to make and is one of the best methods to help your kids consume this nutritious vegetable. Choose fresh round eggplants for this recipe to get the best results. There are several types of batters around the world that are used for deep fried preparations. Since this recipe also involves deep frying, we're going to make our own batter to not only make the fried chunks crispy but also to make them tasty at the same time. You must ensure that the batter should also be created fresh just before you're going to serve it.

Crisp fried eggplants with spring onions

At tea time, do prepare these crispy and delicious fritters made from eggplant slices and fresh spring onions which are seasoned with flavorsome spices.

Preparation Time: 10 minutes
Cooking time: 15 minutes
Servings: 4

Ingredients:
  • 500 gm eggplants
  • 150 gm refined wheat flour
  • 100 gm semolina
  • 50 gm roasted chickpea flour
  • 8 white bread pieces crumbs
  • 1/2 tsp roasted cumin powder
  • 1/4 tsp paprika powder
  • 1/4 tsp oregano
  • 1 bunch of fresh coriander leaves
  • 3 to 4 fresh spring onions (finely chopped)
  • vegetable oil for deep frying
  • salt to taste

Instructions:

  1. Cut eggplants in small flat pieces.
  2. Keep them in a bowl of fresh water and keep aside.
  3. Take wheat flour, semolina, chickpea flour and bread crumbs in a large bowl.
  4. Add cumin powder, paprika, oregano and salt to it.
  5. Add 2 tsp oil and 100 ml of water.
  6. Whip the batter and mix well. Add water if necessary.
  7. Add finely chopped coriander leaves to the batter.
  8. Heat oil and in deep frying pan.
  9. Coat eggplant pieces in the batter and fry till golden brown.
  10. Garnish with finely chopped spring onions.
  11. Serve hot with your favorite sauce.
