Although my kids hate to eat broccoli, still I try to find new ways to help them consume this wonderful vegetable. This time it's in the form of a soup preparation. I've used cheddar cheese for this soup, but you can replace it with your favorite alternative. It's best for patients suffering from cold and cough. You can also add some carrots to this soup to give it a unique flavor. There are two ways to make this soup. Either you can opt to add pureed broccoli to the soup's base or you can go for simple chopped broccoli. I've used the latter method to avoid strong broccoli taste. I prefer fresh cream for this soup, although you can also use skimmed milk too. Garnish of spring onions also goes well with this soup, but my kids prefer grated cheese. So here we go to prepare this creamy and tangy soup.

Enjoy this simmering bowl of cheesy, irresistible and creamy soup loaded with fresh broccoli slices and select spices to pump up your lost appetite in no time.

Cooking time: 25 minutes
Servings: 4

Ingredients:
  • 5 cups broccoli (chopped in small pieces)
  • 100 gm cheddar cheese
  • 1 cup fresh cream
  • 750 ml chicken broth
  • 2 tsp butter
  • 1/2 cup spring onions (finely chopped excluding green leaves)
  • 2 tbsp refined flour
  • 1/5 tsp black pepper powder
  • 1 tsp olive oil
  • salt to taste

Instructions:

  1. Heat butter and olive oil in a non-stick bowl.
  2. Add spring onions and saute for a minute.
  3. Add cream and flour and continuously stir on low flame.
  4. Cook for about 3 minutes and add broccoli.
  5. Saute for about 3-4 minutes and add chicken broth.
  6. Add pepper powder and salt.
  7. Simmer on low flame for about 15 minutes with covered lid.
  8. Garnish with grated cheddar cheese and serve hot.
