Although I prefer steamed or fried rice with lots of vegetables, baked rice is surely on my list when we crave for something richer and tastier. Today, I'm going to share a rice recipe loaded with fresh vegetables and cheese. Although I've used regular cheese in this preparation, you can substitute it with your favorite cheese. If you don't like zucchini, you can use potatoes or mushrooms. There's no need to use long grain rice for this recipe, but make sure you're picking the short and thick rice generally used for risotto. If you want to make this dish more colorful, you can take red, yellow and green bell peppers in equal proportions. So, let's make this main course preparation for our entire family.

Casserole of cheesy bake rice with veggies

Make my favorite baked rice recipe that includes loads of cheese and is pepped up with fresh green vegetables to make it a complete and wholesome meal.

Preparation Time: 15 minutes
Cooking time: 30 minutes
Servings: 4

Ingredients:
  • 2 cups normal rice
  • 3 red bell peppers
  • 500 gm zucchini
  • 300 gm processed cheese
  • 1 onion (finely chopped)
  • 2 green chillies (finely chopped)
  • bunch of parsley (finely chopped)
  • 2 garlic cloves (minced)
  • 1/4 tsp white pepper powder
  • 3 tbsp olive oil
  • salt to taste

Instructions:

  1. Wash and soak rice in water for about 2 hours.
  2. Heat 2 tbsp oil in a pan and add onions.
  3. Saute for about a minute and add minced garlic.
  4. Fry for a minute and add green chillies.
  5. Immediately add half of the bell peppers and zucchini.
  6. Saute on medium flame for about 4-5 minutes.
  7. Add rice, white pepper powder and salt.
  8. Add 5 cups of water and let it summer with covered lid.
  9. Make sure you add bit less salt as cheese itself contains salt.
  10. Heat 1 tbsp oil in a separate pan.
  11. Add remaining zucchini and bell peppers with salt and parsley.
  12. Saute for 4-5 minutes and add pinch of pepper powder.
  13. Taking a baking tray and grease well.
  14. Arrange a layer of bell peppers and zucchini.
  15. Put all the rice above it.
  16. Sprinkle zucchini and peppers over the rice.
  17. Cover the top with grated cheese.
  18. Bake in preheated oven for 10 minutes at 180 degrees.
  19. Serve hot with fried vegetables.
