Grilled Salmon with Lime and Steamed Vegetables

Salmon is one of my favorite fish types because of its taste and ease of cooking. There are so many health benefits associated with it. Here in New Delhi, we cannot get fresh Salmon, but the frozen ones are good enough to get the best results. I generally prefer grilled Salmon with different marinades. Today, I'm going the share my simplest yet extremely tasty grilled Salmon recipe. To get the best results, you need a charcoal based griller that gives a smoky flavor to the fish. If you do not have one, regular electric griller or microwave can be used, but you won't get the unique flavor that only comes when it is cooked on a charcoal fire. So let's get started and see how to make this simple, tasty and filling recipe.

Grilled Salmon with Lime and Steamed Vegetables

Grill this seasoned salmon fillet on a charcoal fire to perfection and serve it with delicious steamed vegetables which perfectly complement the fillet.

Preparation Time: 10 minutes
Cooking time: 45 minutes
Servings: 5

Ingredients:
  • 1 large salmon fillet (approx 800 gm)
  • 4 tbsp olive oil
  • 2 tbsp soy sauce
  • 1/4 tsp fresh ground black pepper
  • 400 gm mix vegetables (eggplant, zucchini, broccoli & tomato)
  • pinch of white pepper powder
  • 1 lime
  • dried rosemary (for garnish)
  • salt to taste

Instructions:

1. Cut the fillet into 5 or 6 equal pieces.
2. Pierce each piece with a fine needle. (This helps marinade go deep into the fish.)
3. Mix olive oil and soy sauce in a glass bowl and apply well on each piece.
4. Cover with aluminum foil and let the fish in marinade for about one hour.
5. In the meantime, steam all mix vegetables for about 30 minutes.
6. Saute them in a non-stick pan for about 2 minutes with little olive oil.
7. Season with white pepper powder and a pinch of salt. Keep aside.
8. Prepare the charcoal griller and place each salmon piece with skin on the top.
9. Grill for about 2 minutes and turn them with skin facing the charcoal.
10. Now mix black pepper in the marinade and apply it on each piece from a brush.
11. Grill for about 5 minutes and remove each piece by placing spatula just above the skin.
12. This will leave the skin on the griller and you'll get a perfectly grilled Salmon piece.
13. Place piece in a serving plate with steamed vegetables.
14. Garnish with lime and dried rosemary. Serve hot.
