Mushroom is known to be one of the most nutritious vegetables. They are rich in thiamine, riboflavin, niacin, biotin, cobalamins, and ascorbic acid. Today, we are going to make mushroom soup topped with noodles. It's a variant of traditional mushroom soup and is very popular in some parts of south-Asia. If you want, you can add some more veggies in this tangy soup. I've kept the consistency of this soup quite thin which can be changed as per your wish. You can use any seasonal mushroom variety for this soup. I'd suggest to add noodles in this soup just before serving. For thicker consistency, puree some part of the mushrooms and add in the soup base. So let's make this yummy and delicious soup.

Creamy mushroom soup

Relish this creamy and flavorful mushroom soup that include hot rice noodles to give you a fulfilling and delicious bowl of hot piping soup to kick start your day.

Servings: 4

Ingredients:
  • 250 gm button mushrooms (thinly sliced)
  • 100 gm rice noodles
  • 2 medium sized onions (finely chopped)
  • 1/2 cup tomato juice
  • 300 ml milk
  • 1 tsp butter
  • 2 tbsp corn flour
  • 1/2 cup fresh cream
  • 1/2 tsp white pepper powder
  • 2 whole red chillies
  • 2 tsp peanut oil
  • salt to taste

Instructions:

1. Wash sliced mushroom and keep aside. Boil noodles and drain them under cold water.
2. Add milk and corn flour in a bowl and mix well.
3. Heat oil in a deep pan and fry sliced onions. Saute for 2-3 minutes and till they are light brown.
4. Add butter and mushrooms and saute for 2 minutes.
5. Slowly pour milk and corn flour mixture and stir continuously.
6. Add noodles, tomato juice, white pepper powder and whole red chillies.
7. Mix well and simmer for 5 minutes.
8. Add fresh cream and salt. Stir on medium heat for 3 minutes.
9. Serve hot with rice.
